1st shot at mac and cheese!!!

Okay, so I said I'd do my first blog today. So I am!!! :) I am watching Bones at the same time, so who knows where my mind will be. :)

So, mom and I decided to make baked mac and cheese. About a year ago I had the BEST baked mac and cheese I have ever had. EVER. So ever since, I've been trying to find something just as good. Lately I decided I wanted to try and make some mac and cheese. So I did. :) The first one was a three cheese mac and cheese that you can find here: http://zupansmarket.journalgraphicsdigital.com/pubs/zupansmarket/current/

First of all, this is the cheese. Just the cheese!

The first thing we did was grate the cheese. This was a mixture of cheddar, italian fontina, and emmenthal cheese. Grading all this was a lot of work. Haha! and soooo much cheese!! It was worth it though.

This is milk, onion, bay leaf, and parsley.

Sounds really weird to mix milk, onion, bay leaf, and parsley; but it worked! You boil this together, and then set it to the side to infuse all the flavors, and was then later pored into the cheese sauce!

Cheeeeeeeeeeese. Sauce.
This is the cheese sauce, boiling. :) After straining the milk mixture we added the cheeses, flour, nutmeg, and dry mustard. And than we mixed and mixed it got soooo thick. It was very tiring for my arm. Oh god. I thought I'd have to mix it forever!!

Cheese sauce being stirred.

This is how thick it was, plus pepper on the top.

Noodles.

We chose to use shell noodles, instead of the elbow noodles the recipe called for because we thought they would fill with the cheese and be more flavorful! And it worked. :) This is the noodles as they were boiling, and softening up.

Cheese sauce all on the noodles.

This is the macaroni with the topping on it.

The topping on the mac and cheese was made out of bread crumbs and melted butter. Speaking of butter, check out how buttered up the pans had to be!!!!

Thats butter. No spray pam. Just butter. Mmmmm.

Right before it was in the oven.

Before you put it in the oven you put some extra kept out cheese on it. Yum yum. Sadly, It was all devoured before we could take a picture of the finished product!!!  Lemme tell you though, it looked, and tasted sooo good.

As good as this mac and cheese was, it was not as good as the mac and cheese I had last year. My search will continue! And you will continue to be along for the ride. :)

~ Cordy Out.

P.S, I got distracted so much it took me two and a half whole episodes of Bones to finish this!! Bahahah!
